Beef Delmonico Steak is a name that is widely used and the actual cut varies by region. At Ode to Swine, our Delmonico steaks are cut from the same muscle as the Ribeye Steak but come at a reduced cost! The lower cost is due to the steak coming from the chuck section. They are cut here to seperate the chuck from the ribeye section. There is only about 3lbs total per animal.
