Bresaola

Ingredients-

  • 3lb       High Quality, Pasture Raised, Beef Eye of Round

  • 25g      Kosher Salt

  • 30g      Sugar

  • 6g        Fresh Thyme, Chopped

  • 6g        Fresh Rosemary, Chopped

  • 5g        Black Pepper, Fresh Ground

  • 4g        Cure #2

  • 5ea      Juniper Berries, Crushed

Instructions-

  1. Chop fresh ingredients and grind the black pepper. Add them to a bowl with the remaining dry ingredients and mix to combine. Next, separate the mix into 2 portions.

  2. Take 1 portion of the dry mix and rub it all over the meat until it is fully covered. Add the rubbed meat to a regular vacuum seal bag and seal. (We find that a vacuum seal works best but if you do not have a vacuum sealer, a ziplock bag will work.)

  3. Place pack meat into the fridge for 7 day and turn it every other day.

  4. After the 7 days, remove the beef from the liquid and rub the 2nd portion of the rub. Repack and return the meat to the fridge for 7 more days, turning every other day.

  5. After the second 7 days, remove the beef from the fridge and rinse under cold water. Rinse until all spices have been removed and pat dry with a paper towel.

  6. Set on a rack with a paper towel lightly covering for 2-3 hours.

  7. Place the Beef into a Dry Aging Bag and seal. Place back into the fridge, on a rack, for about 3 weeks or until it has lost 30-40% of its original weight.

  8. Slice and enjoy!
